Chicken and mushroom pasta recipe is a no brainer comfort food any day of the week and can be made in less than 20 minutes. Talk about quick mid-week dinner and this always become an easy way to have a good tasty meal in less time.

I guess what’s so comforting about a creamy bowl of pasta is its warmth and fulfilment that you get just after having one bite. Its creamy and 100% full of flavour, mixed with umami mushrooms and grilled chicken, is a delicious bowl of pasta.

Pasta is something I have once every week because it’s a convenient and easy dinner solution for me. There are broadly 2 types of sauces, one being a white sauce base the other one being a tomato base. well, there is more, but broadly this is what you would make on a weeknight. Living in a uni accommodation in France many many years ago, pasta used to be my life saviour, I would definitely make pasta at least 4 times a week and being young and lazy, it was one of the easiest options for me and especially when you live on a budget.

Have you ever wondered when you order a pasta dish from a restaurant how does it ever turn up so fresh? well, let me tell you a small secret. we as chefs boil pasta and make the sauce in advance. all we do reheat the components separately and toss the pasta together just before serving. I will teach you simple tricks on how to do that and how to reheat pasta so that it looks like its freshly made 🙂

Now many recipes call out for wine, but I am not going to use any wine in this recipe because white wine definitely is not something I have lying around in my household and doing it without white wine is definitely not noticeable, because there is a big depth of flavours delivered through the mushrooms in this recipe.

Now if a recipe is calling out a creamy mushroom pasta it definitely needs to shout mushrooms!!! isn’t it!!! so the mushroom is the biggest flavour contributor to this recipe. also when I see many people make creamy mushroom and chicken pasta, the common mistake done by many people is not letting the mushrooms infuse in the cream which in turn makes the biggest flavour bomb explosion. many recipes just taste like cream pasta sauce with mushrooms added. No that’s not how its suppose to taste it is supposed to be creamy mushrooms. and I will teach you simple tricks on how to get that flavour punch.

How do I cook chicken before adding pasta

This is a one-pot sauce, therefore flavour building is very vital to get an extremely flavourful dish. Chicken cubes or strips need to be pan-fried well, until golden brown, this will give the dish an extra layer of flavour and roast notes.

How to make creamy chicken and mushroom pasta sauce

It’s super simple and the sauce is a one-pot dish, so you don’t need to cook the chicken beforehand. the chicken needs to be pan-fried first, then mushrooms need to be added and sauteed, in this process, you will take off all the water in mushrooms and extracting all the mushroom flavours out, at this point your pan will have all the juices from the chicken and mushroom and then cream needs to be added which needs to be cooked and reduced for 2 minutes in order for the sauce to absorb all the mushroom and chicken flavour.
It is very important that you don’t skip the process of pan-frying the chicken and mushrooms as the flavour extraction is what makes the sauce full of flavour.

Can I make creamy mushroom pasta with chicken in advance

You definitely can cook the pasta in boiling water and make the sauce and leave the components separately, just before serving reheat sauce and pasta and toss together, this way you will have a creamy bowl of pasta that is well coated and creamy and not dried out.

How do I reheat creamy chicken mushroom pasta

To reheat the sauce, simply add the sauce to a pan and reheat on low heat. until heated through. Then to reheat pasta, boil a pot of water on high heat, when the water is boiling, just blanch the pasta for maximum 30 seconds and add it directly to the heated sauce.

How to cook pasta

cooking pasta is quite simple but two major things need to adhere for best results
1. Water needs to be boiling before adding pasta
2. Water needs to have salt, and olive oil when boiling pasta, Olive oil will help the pasta to not stick together

How to store cooked pasta?

Once pasta is cooked, strain it and run the pasta under cold water, this will stop it from being cooked further, then toss it with olive oil, this ensures the pasta does not stick together once stored in the fridge, then store up to 2 days in the fridge.

Equipment

  • Pan

Ingredients

  • 350 g Chicken breast cut into chunks
  • 200 g Mushrooms Sliced
  • 2 tbsp Onion Chopped
  • 2 cloves Garlic Chopped
  • 300 g Pasta Any type of pasta
  • 200 g Cream Thick, cooking
  • 1/2 tbsp All-purpose flour

Garnish

  • Parmesan Grated
  • Parsley Chopped

Instructions

  • Cook pasta according to packet instructions ( see above article, to check tips on how to cook pasta correctly)
  • Heat a pan on medium heat with oil
  • Once heated add the chicken and cook well, until it is golden brown on all sides
  • Add the onion and garlic and cook well until soft, Then add the mushrooms for 2 minutes. ( Mushrooms need to be soft and wilted)
  • Add cream, then let it cook for 2 minutes ( At this point the cream should turn lightly brown from the juices of the mushrooms infused into the cream), Then add flour and cook for further 1 minutes ( The sauce will thicken up instantly)
    Season with salt and pepper.
  • Once the sauce is thick, add the cooked and drained pasta
  • Mix well until well incorporated, grate parmesan and top with chopped parsley and serve immediately
