Usually, most of my chocolate cake recipes will have buttermilk in it, because that’s the secret ingredient that I use to make cakes extra soft but not this one because we don’t want the muffins to be too soft but I am using a bit of sour cream or you can use plain yogurt as well, to get a bit of softness and gooiness inside the muffin.

How to bake double chocolate chip muffin
Baking double chocolate chip muffins are easy, just like cupcakes you can either use cupcake liners or muffin liners. If you don’t have paper liners, you can also spray oil on to the muffin tray and directly bake inside, but my personal preference is always to use a liner, saves time washing

Muffins can be eaten as a breakfast snack, tea time snack or even midnight snack. well, who the hell needs an occasion to eat sweets. Eat whenever you please
How to store muffins
If you like to keep the muffins for a couple of days, make sure to store them in an airtight container the outside of the muffin can get dry if left outside with no covering.
How much batter to fill into the muffin liners
Usually, for cupcakes I would always say, fill 3/4 of the liner, but for muffins, you can fill a full liner because the best characteristic of a good muffin is the over spilled dome top which usually gets a crust when baked.

Double chocolate chip muffins from scratch
Equipment
- Oven
Ingredients
Dry ingredients
- 100 g All-Purpose flour
- 40 g Cocoa Powder
- 1/2 tsp Baking powder
- 1/2 tsp Baking soda
- 1/2 tsp Salt
- 90 g White sugar
Wet ingredients
- 36 g Oil Vegetable, canola
- 1 Egg
- 1 Egg yolk
- 1 tsp Vanilla essence
- 92 g Sour cream or plain unflavoured yogurt
Final ingredients
- 60 g Hot water
- 112 g Chocolate chips
Instructions
- Preheat oven to 190C. Line muffin trays with cupcake liners or muffin liners
- In a medium bowl mix together all the dry ingredients ( Make sure the flour, cocoa powder and baking powder is sifted)
- In a separate bowl add all the wet ingredients except the hot water and chocolate chips together and mix well with a whisk
- Mix both wet ingredients and dry ingredients together using a whisk
- Add the hot water and mix well. Once the mixture is smooth Finally, add 3/4 of the chocolate chips (reserve the rest to add on the top)
- Pour the muffin mixture into cupcake liners or muffin liners (fill all the way up). Sprinkle chocolate chips on the top
- Bake for 17-25 mins
