Pol Toffee (Coconut rock recipe)

Coconut rocks or Sri Lankan coconut toffee

Ingredients

  • 200 g Coconut (Frozen grated or fresh grated)
  • 45 g Water Tap
  • 300 g White sugar
  • 1 Tablespoon Vanilla essence
  • 25 g Butter Unsalted or salter
  • 1 Tablespoon Milk powder Dry (NO FRESH MILK)

Instructions

  • First butter the tray & keep it aside
  • Then add the sugar and water to a pan and place it on a medium fire until the sugar is disolved after the sugar dissolved, add the coconut & stir
  • Then add vanilla & butter, Milk powder and colouring. Keep stirring until the water has evaporated.
    When stirring the mixture you will feel to your hand that the mixture is getting harder and harder. draw a line in the middle of the pot and see if the mixture mixes back together or the line stays in its place. if it stays in its place, then it means the mixture is ready, if it comes back together, keep stirring until it gets thicken
    This process will take around 30-40 minutes
  • Take the mixture out of the fire and layer it on the buttered tray using a rubber spatula to mould it
    Work quickly at this stage so before the mixture sets
  • When it is semi-hard cut out the squares. Don’t separate. When it cools down then you can cut it fully again using a knife & separate it
