Homemade chocolate chip cookies are crunchy on the outside and soft and gooey on the inside is that what you are looking for in a good cookie recipe? well then look no further because that is exactly what you will get with this recipe.
I have done it all when it comes to cookie recipes, freezing the dough, melt the butter, adding less brown sugar, more brown sugar, you name it and I have done it all.
When I was developing a good cookie recipe, I realised one thing, that is ‘KIS’ (Keep it simple), let’s be honest, we make cookies to have with our afternoon tea or a snack, and do you want to spend hours and hours doing a cookie with this enormous amount of steps. well no!!! so that’s why this cookie recipe will be super simple and ultra-delicious, and that’s what I call minimum effort and maximum results.
I remember growing up, we never had cookies in Sri Lanka, well that’s a lie, we did have cookies for Christmas, but cookies were not something you would regularly have at tea time, the closest thing we would have was a biscuit. Sri Lanka was colonised by the British in the late 18 century so we have a huge high tea culture like the British. Having tea plantations and being very famous for Ceylon tea we really went all out for tea time.
I remember we used to have assortment biscuit tins ( I would call this biscuits plus cookies that were packed in a fancy box) they were definitely imported from overseas and whenever guests visit our house or we would go to someone else’s house we would be given these biscuit tins which later ended up as a sewing kit in many houses.
I do remember reading poems about cookies, but was always fascinated where do cookies really come from? the famous poem; who put the cookie in the cookie jar” ‘who me’ ‘not me’, do anyone remember that??? or is it just me?
After living in Australia, I have to admit that I became a cookie addict. even when I get my coffee from a coffee shop here in Australia, I get a free cookie, so I would say cookies are quite a big deal in Australia? what do you think?
I like to know, are you one of the people who always have cookies in a cookie jar? I tried it for some time, then my partner finishes them in one day, so I had to stop it, these cookies are truly addictive!!!!
What should the texture of the cookie dough be like before baking?
The texture should be scoopable, not too hard, then it’s going to end up as a hard cookie. Not too soft and sticky then they are going to end up flat.
Why chocolate chip cookies are flat
Have you ever got cookies that are flat and do not have a slightly bumpy form? well that’s because there is too much liquid in the dough or your butter was too soft when it was added in, in this case, you will have a sticky dough which in turn will melt in the oven which will result in a flat cookie
How to know when chocolate chip cookies are done?
The trick is when chocolate chip cookies come out of the oven they will be soft, once cooled down they will harden up. so how do we know if the cookies are done? take one off the oven transfer it to another tray, if it hardens up in 30 seconds then they are definitely done.
Can chocolate chip cookie dough be frozen
Yes, it can be, you can definitely have a freezer stache to be baked whenever you want. But first, they need to thaw overnight and then baked in the oven as specified in the recipe card below.
How do you make chocolate chip cookies from scratch?
I have made sure this recipe is super simple so you can make this recipe quite regularly, which is the purpose, isn’t it!!! we all love a good homemade chocolate chip cookie.
Firstly the butter and sugar need to be beaten, then the rest of the ingredients are added and then portioned into small balls and baked in the oven, the most important step is to cool them and that’s it!!! it’s that simple.
Ingredients
- 62 g Butter Unsalted

60 g Brown Sugar

50 g White Sugar

1 tbsp Maple Syrup Optional

1 tsp Vanilla Essence

1/2 Egg
-
140 g All-purpose Flour
-
1/2 tsp Baking soda

55 g Dark chocolate chips Chocolate chips or chopped

55 g Milk Chocolate chips Chocolate chips or chopped

1/2 tsp Salt Table salt
Directions
Preheat oven to 180C (Conventional)
In a stand mixer add butter to a mixing bowl and mix until soft and creamy
Add white sugar and brown sugar and mix until creamy
Add egg, vanilla, maple syrup and mix well until incorporated
Add the flour, baking soda, salt and fold until well incorporated
Finally, add the chocolate chips and mix well
Portion the mixer into equal balls and roll them using your palms
Place the rolled dough 2 cm apart on a lined baking tray
Bake the cookies in the oven for 10 mins ( depending on the oven, you might need to turn them half way through)
Once cooked take them out of the oven and place them on a tray or wire rack to cool down
